I have never been a real picky eater, but I have always had previously conceived notions of what taste good together. Spinach and eggs were not on my top list of pairings. Then I moved to Germany.
This is a nice rustic dinner, that is ideal when the weather turn cold. The potatoes fill you up while the creamed spinach gives a nice sauce to crush the egg yolk in and makes a wonderful mixture of flavors. It is quite simple to make.
Frozen creamed spinach
Prepare spinach according to directions.
Cube and boil potatoes
Arrange on a plate
