This was one of the mainstays in my Deli. It is a quick, simple salad that works every-time!
2 tsp lemon juice
3/4 tsp dill
2 tbsp Extra virgin olive oil
1 tbsp Vinegar
1/2 cup Heavy cream
Pinch of salt
Pinch of sugar
Peel and slice the cucumber. The thinner you slice it, the better it will taste.
In a bowl, combine the cream, oil, lemon juice and vinegar.
Stiring slowly, add the sugar and salt to taste.
Add the cucumber and dill to the mixture and stir until the vegetables are coated with the dressing.
*Thinly sliced onion and / or tomato makes a great addition to the salad.
