I wanted to share with you one of my, and my families, favorite vegan recipes. They are upside down nacho tacos. They are perfect for both simple vegan eating and minimalist cooking. My mother used to call them haystacks, and I am not sure that is a better or worse name for them. What they are is an amazing, cheap, filling, balanced, whole food, all natural, easy to make, meal gem!
What you need:
A base of corn chips (watch the labels for chips with the least ingredients as possible) or rice (any kind, cooked)
Beans. I cooked these beans in the crock pot with 2 cups beans, 1 smallish onion, 1 tsp of crushed garlic, and salt to taste.
Fresh salad ingredients. Lettuce, spinach, avocado, cucumber, olives, shredded carrots… or any other fresh vegetable.
Optional toppings include salsa, organic dressing, or whatever else you want to throw on.
With a bit of modification this meal can change up and be different for several days in a row, all using the same crock pot of beans. Any chili recipe works nice too. I like adding tomatoes or different beans for variety.
