My girlfriend is one of my biggest supporters, so when she asked me to make a BBQ sauce specifically for her, I was quick to agree. The only direction she gave me was “to make it taste as good as what she used to eat growing up”. Sounds easy enough, right?? Since she couldn’t give me a recipe , we started playing 20 questions. Q – Was it sweet? A – Yes,but not really sweet. Q – Anything you can tell me about it that made it special? A – Yes, it was my favorite. Ok, looks like I had my work cut out for me. After several more hours of questions, and her trying all my BBQ sauces we have in the fridge, I finally figured out what it needs to taste like. It needed to be that super sweet Kansas City Q Sauce, with a bit of a twist just for her. So Far So Good.
Half sweet red onion
4 Garlic Cloves
Molasses / Brown Sugar to taste
Salt / Pepper/Cayenne
Finely chop the onions, garlic, and pineapple. Caramelize the ingredients
In a separate bowl, combine all the other ingredients except the ketchup. Add the ketchup to the onions mixture, stirring constantly to keep the mixture from sticking. Slowly whisk in the remaining ingredients. Reduce heat and simmer for 20 minutes. Remove from heat and puree everything to a smooth texture using an immersion blender.
Bottle immediately and store in refrigerator for up to 3 months. (I doubt it will last that long)
Once the sauce was finished, naturally I had to grill some chicken for her to try it out with. Grilled chicken breasts with a quick rub were thrown on the grill and cooked to perfection. Plated with yellow rice and grilled onions, everything looked amazing. The moment of truth came as she dipped the chicken into her namesake sauce, and she smiled.
