Roasted Mango Habenero Hot Sauce

What do you do you have bought an abundance of spicy peppers????  You make a hot sauce!  After a trip to my favorite local produce market, I realized that I had bought quite a bit of vegetables that I hadn’t planned on.  (This is why you should never go shopping when you are hungry )  Naturally I knew that it wouldn’t be a problem to turn the leftovers into something edible.  After surveying what I had to work with, I came up with a great idea.  Since chicken wings were on the menu that night, I figured I could come up with a sweet/ spicy coating for them.


Ingredients

Mango / Pepper mix ready to roast

12 Habenero Peppers

8 Garlic Cloves

1 Ripe Mango

White wine vinegar 

Molasses / Brown Sugar to taste

Salt / Pepper

Ingredients

Cut and de-seed  the peppers.   Word to the wise…. Wear gloves and work in a well ventilated area.

Peel and crush the garlic

Cube the mango

Mix the brown and molasses  together and marinate the other ingredients we cut in the mixture for at least 1 hour. Preheat oven to 425.

Roast the marinated mixture for 20-25 minutes.

Immediately transfer the roasted vegetables to the food processor, add the vinegar and puree. 

Now you can pour into a sterilized bottle and store up to 4 months in the refrigerator.
